RIPE 由出生于新加坡的奶酪商 Hakim 于 2019 年在维多利亚女王市场创立，致力于推广澳大利亚牛奶，支持本地奶农，并减少食品里程。如今，RIPE 已迁至乳品大厅，并拓展业务至 &Cured，提供精致三明治、散养肉类和熟食。RIPE 拥有超过 50 种澳大利亚奶酪和墨尔本远近闻名的烤吐司，用美味奶酪证明人生苦短，何不尽情享受？

RIPE Cheese is the world’s first and only all-Australian cheese shop, proudly showcasing the very best local cheese, crackers, condiments and deli fare. You won’t find European imports here—only exceptional products from small, family-owned Australian producers.

Founded in 2019 by Singapore-born cheesemonger Hakim at Queen Victoria Market, RIPE champions Australian milk, supports local dairy farmers and reduces food miles. Now located in the Dairy Hall, RIPE has expanded into gourmet sandwiches, free-range meats and charcuterie under &Cured. With over 50 Australian cheeses and Melbourne-famous toasties, RIPE proves life is too short not to enjoy great cheese.
